Instructions:
Step 1: In a small bowl, mix together smoked paprika, ground cumin, chili powder, cayenne pepper, salt, and black pepper.
Step 2: Rub the spice mixture evenly over the chicken pieces. Drizzle with olive oil and massage into the meat. Let marinate for at least 30 minutes.
Step 3: Preheat your grill to medium-high heat. Oil the grates to prevent sticking.
Step 4: Grill the chicken for about 6–7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C).
Step 5: In the last few minutes of grilling, brush generously with barbecue sauce and let it caramelize on the grill.
Step 6: Remove from heat and let rest for 5 minutes. Garnish with chopped parsley or cilantro if desired.
Storage Information:
Store leftover BBQ chicken in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on a skillet over medium heat until warmed through.
