Seven Colours Plate with Chicken, Spinach Rice, Chakalaka, Beetroot & Potato Salad

This vibrant and beloved South African Sunday plate brings together a medley of flavours and textures—from spicy saucy chicken to fragrant yellow rice, creamy potato salad, and traditional sides like chakalaka and beetroot. It’s comforting, colourful, and packed with soul!

Ingredients

For the chicken:
6 chicken thighs or drumsticks
1 tablespoon oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon curry powder
1/2 teaspoon paprika
1/2 teaspoon chili flakes (optional)
1/2 teaspoon Seven Colours grill seasoning (or BBQ seasoning)
1/2 cup tomato purée
1 cup chicken stock
Salt and pepper to taste

For the spinach rice:
2 cups cooked yellow rice (turmeric rice)
1 cup spinach, finely chopped
1/2 cup frozen peas
1 tablespoon oil or butter
Salt to taste

For the chakalaka:
1 tablespoon oil
1 onion, sliced
1 clove garlic, minced
1 bell pepper, chopped
1 cup grated carrots
1 can baked beans in tomato sauce
1 teaspoon curry powder
Salt and pepper to taste

For the potato salad:
4 medium potatoes, peeled and cubed
1/2 cup mayonnaise
1 tablespoon mustard
1 teaspoon vinegar
Salt and pepper to taste

For the beetroot:
1 cup cooked beetroot, grated or diced
1 tablespoon vinegar
Pinch of sugar (optional)
