500g sausage meat
1 small onion, finely chopped
1 small carrot, grated
1/2 teaspoon dried thyme
Salt and pepper, to taste
3 hard-boiled eggs, peeled
100g grated cheddar cheese
1 sheet shortcrust pastry (or homemade pastry)
1 egg, beaten (for egg wash)
