Step 1: In a large bowl, mix flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Add ice water gradually until dough forms. Divide into two discs, wrap, and chill for at least 1 hour./nStep 2: In a saucepan, combine apples, sugars, cinnamon, nutmeg, lemon juice, cornstarch, and butter. Cook over medium heat until apples are soft and mixture thickens. Let cool completely./nStep 3: Preheat oven to 375°F (190°C) and line baking sheets with parchment paper./nStep 4: Roll out the chilled dough and cut into rectangles or circles. Place a portion of filling in the center of each piece./nStep 5: Fold the dough over the filling, seal edges by crimping with a fork, and cut small slits on top for ventilation./nStep 6: Transfer pies to baking sheets, brush with egg wash, and sprinkle with coarse sugar if desired./nStep 7: Bake for 20–25 minutes or until golden brown. Allow to cool slightly before serving.
Storage and Reheating Tips
Store leftover hand pies in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days. To reheat, warm in a 350°F (175°C) oven for 8–10 minutes to restore crispness. You can also freeze baked pies for up to 2 months and reheat directly from frozen in the oven until heated through.
