Instructions
Step 1: Preheat oven to 400°F (200°C).
Step 2: Using a sharp knife, carefully slice a pocket into each chicken breast without cutting all the way through.
Step 3: Season the chicken on both sides with salt, pepper, garlic powder, paprika, and Italian seasoning.
Step 4: Stuff each chicken breast with 2–3 asparagus spears, 1 slice of cheese, and a few pieces of sun-dried tomatoes. Secure with toothpicks.
Step 5: Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 3–4 minutes per side until golden.
Step 6: Transfer the skillet to the preheated oven and bake for 15–20 minutes, or until the chicken is cooked through and reaches 165°F (74°C) internally.
Step 7: Remove toothpicks and serve warm with your favorite side.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through. This dish can also be frozen—wrap tightly and store for up to 2 months. Thaw overnight in the fridge before reheating.
