Step 1 Heat a skillet over medium heat and cook the bacon until crispy, about 6–8 minutes. Transfer to a paper towel-lined plate and keep warm. /n
Step 2 Lightly toast the soda bread halves in the same pan or under a grill until golden brown. Spread butter over the warm bread. /n
Step 3 Add olive oil to the skillet if needed and crack the eggs into the pan. Fry to your preferred doneness, seasoning with salt and freshly ground black pepper. /n
Step 4 Place two slices of bacon on the bottom half of each soda bread piece. /n
Step 5 Carefully top each with a fried egg. /n
Step 6 Close the sandwiches with the remaining soda bread halves and serve immediately with tomato ketchup if desired.
Storage and Reheating Tips
Bacon and Egg Sodas are best enjoyed fresh. If needed, store components separately in airtight containers in the refrigerator for up to 2 days. Reheat bacon and eggs gently in a skillet and toast the soda bread before assembling to maintain texture and flavor.
