Instructions
Step 1: In a large skillet over medium heat, cook the ground beef and diced onion until beef is browned and onion is soft. Drain excess grease.
Step 2: Add minced garlic and cook for 1 minute until fragrant.
Step 3: Stir in cooked rice, diced tomatoes, and ketchup (if using). Mix well and cook for 2-3 minutes until heated through.
Step 4: Remove from heat and stir in half of the shredded cheddar cheese. Top with the remaining cheese and crumbled bacon.
Step 5: Cover the skillet for a few minutes to melt the cheese, or place under the broiler for a bubbly top. Garnish with green onions or parsley if desired.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop, adding a splash of broth or water if needed.
