Instructions:
Step 1: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
Step 2: Add the diced onion and garlic to the skillet and sauté until softened, about 3–4 minutes.
Step 3: Stir in the diced tomatoes, cooked rice, ketchup, and mustard. Season with salt and pepper. Cook for 3–5 minutes until heated through.
Step 4: Mix in the shredded cheddar cheese and most of the crumbled bacon. Stir until the cheese is melted and well combined.
Step 5: Top with extra cheese and the remaining bacon. Cover and let sit for a minute or two to allow the cheese to melt.
Storage Information:
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop with a splash of water to keep it moist.
