step 1 Cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain.
step 2 In a bowl, whisk the eggs with milk, salt, and pepper.
step 3 Melt butter in a nonstick skillet over medium-low heat and pour in the eggs. Stir gently with a spatula until just set and creamy. Remove from heat.
step 4 In a small bowl, mash the avocado with lemon juice and a pinch of salt.
step 5 Toast the croissant halves lightly if desired.
step 6 Spread the mashed avocado onto the bottom half of each croissant.
step 7 Layer with scrambled eggs, a slice of cheese, and 2 slices of bacon per sandwich.
step 8 Top with the remaining croissant halves and serve immediately.
Storage and Reheating Tips
These sandwiches are best enjoyed fresh, but you can store leftovers (without avocado) in the refrigerator for up to 1 day. Reheat in a toaster oven or low oven until warmed through. Add fresh avocado just before serving for best texture and flavor.
