Instructions
Step 1: In a large skillet, melt butter over medium heat. Whisk eggs with garlic powder, salt, and pepper, then pour into the skillet.
Step 2: Cook eggs, stirring gently, until just set. Remove from heat.
Step 3: Warm the tortillas in a microwave or skillet until soft and pliable.
Step 4: Lay out tortillas and divide scrambled eggs, potatoes, bacon, and cheese evenly between them.
Step 5: Fold in the sides and roll up the tortillas to form burritos.
Step 6: Optional: Place burritos seam-side down in a skillet or panini press to toast and seal.
Step 7: Serve immediately with your favorite toppings or wrap for later.
Storage Information
Wrap cooled burritos tightly in foil or plastic wrap and refrigerate for up to 4 days. Reheat in the microwave or oven. For longer storage, freeze burritos individually in foil and place in a freezer bag—freeze for up to 2 months. Reheat from frozen in a 350°F oven until hot throughout.
