Step 1: Heat a skillet or griddle over medium heat.
Step 2: Butter one side of each bread slice. Place two slices, butter-side down, on the skillet.
Step 3: Layer with cheddar cheese, bacon, a generous spread of guacamole, and mozzarella (if using). Top with the remaining bread slices, butter-side up.
Step 4: Grill until the bottom is golden brown, about 3–4 minutes. Carefully flip and grill the other side until golden and the cheese is melted.
Step 5: Remove from skillet, let sit for 1 minute, then slice and serve hot.
Storage Information
These sandwiches are best enjoyed fresh. However, you can store cooked sandwiches in the refrigerator for up to 1 day. Reheat in a skillet over medium heat to restore crispiness—avoid microwaving to prevent sogginess.
