Instructions
Step 1: Preheat your oven to 400°F and line a baking sheet with foil for easy cleanup.
Step 2: Pat the chicken drumsticks dry with paper towels, then arrange them on the prepared baking sheet.
Step 3: In a small bowl, mix together the olive oil, garlic powder, smoked paprika, black pepper, and salt.
Step 4: Brush the seasoning mixture evenly over all sides of the drumsticks.
Step 5: Bake for 25 minutes, then brush generously with BBQ sauce, coating all sides.
Step 6: Return to the oven and bake for another 15 to 20 minutes, until the chicken is cooked through and the glaze is caramelized and glossy.
Step 7: While the chicken bakes, combine the chopped lettuce, sliced cucumber, and halved cherry tomatoes in a serving bowl.
Step 8: Serve the hot BBQ drumsticks alongside the fresh salad and enjoy.
Storage and Reheating Tips
Store any leftover drumsticks in an airtight container in the refrigerator for up to 3 days. The chicken actually tastes great cold, making it perfect for lunch the next day.
To reheat, place the drumsticks on a baking sheet and warm in a 350°F oven for about 10 minutes until heated through. You can also reheat them in the microwave for a quicker option, though the oven will help maintain the crispy exterior.
The salad is best served fresh, but you can prep the vegetables ahead of time and store them separately in the fridge until you’re ready to assemble and serve.
