Instructions
Step 1 Preheat the oven to 400°F (200°C).
Step 2 In a small bowl, mix paprika, garlic powder, onion powder, thyme, oregano, salt, and pepper.
Step 3 Rub chicken breasts with half of the olive oil and half of the seasoning mix.
Step 4 In a large bowl, toss the potato wedges with the remaining olive oil and seasoning mix.
Step 5 Arrange the seasoned chicken and potatoes in a large baking dish or sheet pan.
Step 6 Bake for 30-35 minutes, or until the chicken is cooked through (internal temperature of 165°F) and potatoes are golden and tender.
Step 7 While the chicken and potatoes are baking, bring a pot of water to a boil and blanch the green beans for 3-4 minutes until tender-crisp. Drain and set aside.
Step 8 In a skillet over medium heat, melt butter and add minced garlic. Sauté for 1-2 minutes until fragrant.
Step 9 Add green beans to the skillet and toss to coat in the garlic butter. Squeeze lemon juice over the top and season with salt and pepper.
Step 10 Once the chicken and potatoes are done, garnish with fresh parsley and serve with the garlic butter green beans on the side.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken, potatoes, and green beans on a baking tray, cover with foil, and warm in a 350°F oven for 10-15 minutes. Alternatively, microwave portions on high for 2-3 minutes until heated through.
