Step 1: In a bowl, whisk together soy sauce, ketchup, brown sugar, pineapple juice, rice vinegar, ginger, garlic, and sesame oil to make the marinade.

Step 2: Place chicken thighs in a large resealable bag or shallow dish. Pour in the marinade and refrigerate for at least 1 hour, or overnight for best flavor.

Step 3: Preheat oven to 400°F (200°C). Remove chicken from marinade (reserve marinade) and arrange in a single layer on a greased baking dish. Add pineapple rings on top and around the chicken.
