Instructions:
step 1 Preheat the oven to 375°F (190°C).
step 2 Slice the pears in half lengthwise and use a spoon or melon baller to scoop out the core and create a small well in the center of each half.
step 3 Arrange the pear halves cut-side up in a baking dish. Tuck rosemary sprigs around the pears.
step 4 Fill each pear with cubes of brie cheese.
step 5 In a small bowl, mix the chopped walnuts, cranberries, honey, brown sugar, cinnamon, vanilla extract, and melted butter until combined.
step 6 Spoon the walnut-cranberry mixture over the brie in each pear half.
step 7 Bake for 25-30 minutes or until the pears are tender and the cheese is melted and bubbly.
step 8 Remove from the oven and let cool slightly before garnishing with fresh thyme leaves, if desired.
Storage and Reheating Tips:
Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a 325°F (165°C) oven for about 10-12 minutes, or until warmed through. Avoid microwaving as it may make the pears soggy and the cheese rubbery.
