Step 1 Preheat oven to 375°F (190°C). Season the pork roast generously with salt, pepper, paprika, and thyme. /nStep 2 Heat olive oil in a skillet over medium-high heat and sear the pork on all sides until browned. /nStep 3 Transfer the pork roast to a baking dish or foil pan. /nStep 4 In the same skillet, sauté garlic until fragrant, then add balsamic vinegar, brown sugar, chicken broth, and Dijon mustard. /nStep 5 Bring the mixture to a simmer and cook for 3–5 minutes until slightly thickened. /nStep 6 Pour the glaze over the pork roast, reserving a small amount for later. /nStep 7 Roast in the oven for 45–60 minutes, basting occasionally, until internal temperature reaches 145°F (63°C). /nStep 8 Remove from oven, let rest for 10 minutes, then slice. /nStep 9 Drizzle with reserved glaze before serving.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheat in the oven at 325°F (165°C) or microwave until warmed through, adding extra glaze or broth to keep it moist.
This roast can be frozen for up to 2 months; thaw overnight before reheating.
For best results, slice just before serving to retain juices.
