Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
Step 2: In a large bowl, mix the mashed bananas with melted butter. Stir in brown sugar, honey (or maple syrup), vanilla extract, and egg until combined.
Step 3: In a separate bowl, whisk together flour, oats, baking soda, salt, and cinnamon if using.
Step 4: Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
Step 5: Pour the batter into the prepared loaf pan and smooth the top.
Step 6: Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Storage Information
Store banana oat bread in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week. For longer storage, wrap tightly and freeze for up to 2 months.
