Instructions:
Step 1: Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Step 2: Cook pasta according to package directions until al dente. Drain and set aside.
Step 3: In a large skillet, cook the ground beef with diced onion over medium heat until browned. Season with salt and pepper, then drain excess grease.
Step 4: Stir in the BBQ sauce and sour cream into the beef mixture. Mix until well combined.
Step 5: In a large bowl, combine the cooked pasta, beef mixture, and half of the shredded cheeses. Stir until evenly coated.
Step 6: Transfer mixture to the prepared baking dish. Top with remaining cheese and sprinkle crumbled bacon over the top.
Step 7: Bake for 20–25 minutes until the cheese is melted and bubbly. Let cool for 5 minutes before serving.
Storage Information:
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or oven until warmed through. This casserole also freezes well for up to 2 months—just thaw overnight in the fridge before reheating.
