Instructions
Step 1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
Step 2. In a bowl, whisk together olive oil, barbecue sauce, honey, paprika, garlic powder, onion powder, salt, black pepper, and smoked paprika.
Step 3. Add the chicken drumsticks and coat them thoroughly with the BBQ mixture.
Step 4. Arrange the drumsticks on one side of the prepared baking sheet.
Step 5. In a separate bowl, toss the potato wedges with olive oil, garlic powder, parsley, dill, salt, and black pepper.
Step 6. Spread the potato wedges on the other side of the baking sheet in a single layer.
Step 7. Roast for 40–45 minutes, turning the potatoes halfway through cooking, until the chicken reaches an internal temperature of 165°F (74°C).
Step 8. Brush the drumsticks with additional barbecue sauce during the last 10 minutes of roasting to create a glossy, caramelized finish.
Step 9. While the chicken and potatoes cook, combine the green cabbage, purple cabbage, and shredded carrot in a large bowl.
Step 10. In a small bowl, whisk together mayonnaise, apple cider vinegar, lemon juice, sugar, salt, and black pepper.
Step 11. Pour the dressing over the cabbage mixture and toss until evenly coated.
Step 12. Refrigerate the coleslaw until ready to serve.
Step 13. Remove the chicken and potatoes from the oven and allow them to rest for 5 minutes.
Step 14. Arrange the BBQ chicken drumsticks, herb potato wedges, coleslaw, and cucumber slices on serving plates.
Step 15. Garnish with chopped fresh parsley and serve immediately.
Storage and Reheating Tips
Store leftover chicken, potato wedges, coleslaw, and cucumbers in separate airtight containers in the refrigerator for up to 4 days.
Reheat the chicken in a 350°F (175°C) oven for 10–15 minutes or until heated through.
Reheat the potato wedges in an oven or air fryer at 400°F (200°C) for 5–7 minutes to restore crispness.
The coleslaw is best enjoyed within 2 days and should remain refrigerated.
Do not freeze the coleslaw, as the dressing may separate and the vegetables may become watery.
Cooked chicken drumsticks can be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating.
