Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with foil.
Step 2: Toss the chopped baby potatoes with olive oil, salt, and black pepper. Spread them on the baking sheet and roast for 20-25 minutes until golden and crispy, stirring halfway through.
Step 3: While the potatoes roast, brush the BBQ sauce generously over the chicken drumstick. Place it on a separate baking sheet lined with foil.
Step 4: Bake the BBQ chicken for 25-30 minutes until cooked through and the glaze is caramelized and sticky.
Step 5: Wash and prepare your fresh vegetables. Slice the cucumber, halve the cherry tomatoes, and chop the mixed lettuce.
Step 6: Arrange the cooked potatoes on one side of your meal box container. Place the BBQ chicken on the opposite side.
Step 7: Create a fresh salad bed with the mixed lettuce, then top with cucumber slices and cherry tomatoes.
Step 8: Add your dipping sauce in a small container on the side and serve immediately, or cover and refrigerate for later.
Storage and Reheating Tips
Store your meal box in an airtight container in the refrigerator for up to 3 days. Keep the dipping sauce separate to prevent the salad from getting soggy.
To reheat, remove the fresh salad and dipping sauce, then microwave the chicken and potatoes together for 1-2 minutes until warmed through. Add the cold salad back just before eating for the best texture and freshness.
For meal prep success, assemble multiple boxes at once and store them with the fresh vegetables in one compartment and the warm items in another. This way, you can quickly reheat and enjoy throughout the week.
