Instructions:
step 1 In a bowl, whisk together olive oil, soy sauce, Worcestershire sauce, honey, apple cider vinegar, garlic, paprika, thyme, salt, and pepper.
step 2 Place lamb chops in a resealable bag or shallow dish and pour the marinade over them.
step 3 Marinate in the refrigerator for at least 1 hour, preferably 4 hours or overnight for maximum flavor.
step 4 Preheat grill or grill pan over medium-high heat.
step 5 Remove lamb from marinade and let excess drip off. Grill for 3-4 minutes per side for medium-rare, or until desired doneness.
step 6 Let rest for 5 minutes before serving to retain juices.
