Instructions

Step 1 Preheat your oven to 150°C (300°F) and line baking sheets with parchment paper.
Step 2 Sift together almond flour and powdered sugar to remove lumps.
Step 3 Beat egg whites until foamy, then add cream of tartar.
Step 4 Gradually add granulated sugar and whip until stiff peaks form.
Step 5 Add vanilla extract and divide batter to mix in different food colorings.
Step 6 Fold dry ingredients into the meringue until smooth and flowing.
Step 7 Pipe bear shapes (round face with small ears) onto the baking sheet.
Step 8 Tap the tray to release air bubbles and let rest until a skin forms.
Step 9 Bake for 15–18 minutes and allow to cool completely.
Step 10 Prepare filling by beating butter, powdered sugar, and cream until smooth.
Step 11 Pipe filling onto one shell and sandwich with another.
Step 12 Decorate with candy or icing to create bear faces and details.

Storage and Reheating Tips

Store macarons in an airtight container in the refrigerator for up to 5 days. Let them come to room temperature before serving. They can also be frozen for up to 1 month. Avoid reheating to maintain their delicate texture.
