Instructions
Step 1: In a skillet over medium heat, cook ground beef until browned. Drain any excess grease.
Step 2: Add taco seasoning and water to the beef. Stir to combine and simmer for 3-4 minutes until thickened.
Step 3: Warm tortillas in a dry skillet or microwave until soft.
Step 4: Spoon a portion of the beef mixture onto each tortilla. Top with a mix of cheddar and Monterey Jack cheese.
Step 5: Fold the tortillas closed and place seam-side down in a skillet or baking dish. Heat over medium-low or bake at 350°F (175°C) for 5-7 minutes until the cheese is melted.
Step 6: Garnish with diced tomatoes, sour cream, and chopped cilantro, if desired. Serve warm.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave until warmed through.
