Beef Meximelt Cheesy Taco

Instructions

Step 1: In a skillet over medium heat, cook the ground beef until browned. Drain any excess grease.

Step 2: Stir in the taco seasoning and water. Simmer for 5 minutes, or until the mixture thickens.

Step 3: Warm the flour tortillas in the microwave or on a skillet until soft and pliable.

Step 4: Sprinkle cheddar and Monterey Jack cheeses onto each tortilla. Add a generous scoop of the taco meat on top.

Step 5: Fold and roll each tortilla into a burrito-style wrap or fold like a taco. Place in a microwave-safe dish or oven-safe tray.

Step 6: Heat until cheese is melted—about 30 seconds in the microwave or 5 minutes in a warm oven (350°F).

Step 7: Top with diced tomatoes, sour cream, and fresh cilantro if desired. Serve warm.

Wrap leftovers tightly in foil or plastic wrap and refrigerate for up to 3 days. Reheat in the microwave or oven until heated through. For freezer storage, wrap individually and freeze up to 1 month. Reheat from frozen in the oven at 350°F until warmed through.
