Berry Chocolate Ice Cream Bars

Instructions

Step 1: Line a loaf pan or silicone ice cream bar mold with parchment paper if needed.

Step 2: Slightly soften the berry ice cream at room temperature for a few minutes.

Step 3: Fold the chopped berries into the softened ice cream.

Step 4: Spoon the ice cream mixture into the molds or loaf pan and smooth the tops evenly.

Step 5: Insert popsicle sticks into each portion and freeze for at least 4 hours or until completely firm.

Step 6: While the bars freeze, prepare the berry sauce by combining the mixed berries, sugar, and lemon juice in a small saucepan over medium heat.

Step 7: Cook until the berries begin to break down and release their juices.

Step 8: Mix the cornstarch and water together, then stir it into the berry mixture.

Step 9: Simmer until slightly thickened, then let the sauce cool completely.

Step 10: In a microwave-safe bowl, melt the milk chocolate chips and coconut oil together in 30-second intervals, stirring until smooth.

Step 11: Remove the frozen ice cream bars from the molds.

Step 12: Dip each ice cream bar into the melted chocolate coating until fully covered.

Step 13: Let the excess chocolate drip off, then drizzle or spoon the cooled berry sauce over the bars.

Step 14: Place the coated bars on a parchment-lined tray and freeze for another 10 to 15 minutes until the chocolate shell is set.

Step 15: Serve immediately or store frozen until ready to enjoy.

Storage and Reheating Tips

Store Berry Chocolate Ice Cream Bars in an airtight freezer-safe container for up to 2 weeks. Place parchment paper between layers to prevent sticking. Keep the bars frozen until serving, as they melt quickly at room temperature. These frozen treats do not require reheating.
