Big Breakfast Plate: Sausage, Scrambled Eggs & Home Fries

Instructions

Step 1 Bring a pot of salted water to a boil. Add diced potatoes and parboil for about 5 minutes. Drain and set aside.
Step 2 In a large skillet over medium heat, add olive oil. Once hot, add parboiled potatoes.
Step 3 Season the potatoes with paprika, garlic powder, salt, and pepper. Cook, stirring occasionally, until golden and crispy, about 10-12 minutes. Set aside.
Step 4 In the same skillet or a new pan, cook sausage patties over medium heat until browned and cooked through, about 4-5 minutes per side. Remove and keep warm.
Step 5 In a bowl, whisk together eggs, milk or cream, salt, and pepper until well combined.
Step 6 Heat butter in a nonstick skillet over medium-low heat. Add eggs and cook gently, stirring slowly until curds form and eggs are just set.
Step 7 Plate the scrambled eggs, home fries, and sausage patties together. Season with additional black pepper if desired.

Storage and Reheating Tips

Store leftovers in separate airtight containers in the refrigerator for up to 3 days. To reheat, warm the sausage and home fries in a skillet over medium heat or in the oven at 350°F (175°C) until hot. Reheat scrambled eggs gently in a skillet over low heat, stirring often to avoid overcooking. Avoid microwaving the eggs as they can become rubbery.
