Instructions
Step 1: In a large bowl, whisk together flour, sugar, baking powder, and salt for the pancake batter.
Step 2: In another bowl, combine milk, 2 eggs, melted butter, and vanilla extract. Mix until smooth.
Step 3: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix, small lumps are okay.
Step 4: Heat a griddle or non-stick skillet over medium-high heat and lightly butter it.
Step 5: Pour 1/3 cup batter onto the griddle for each pancake and cook until bubbles form on top, about 2-3 minutes.
Step 6: Flip and cook the other side until golden brown, about another 2 minutes. Keep warm on a plate.
Step 7: In a skillet over medium heat, cook sausage patties for 3-4 minutes per side until browned and cooked through. Set aside.
Step 8: Heat oil in a large skillet over medium-high heat and add diced potatoes, peppers, and onions.
Step 9: Cook the home fries for 10-12 minutes, stirring occasionally, until potatoes are crispy and tender. Season with paprika, garlic powder, salt, and pepper.
Step 10: In a bowl, whisk together 6 eggs with heavy cream, salt, and pepper.
Step 11: Melt 3 tablespoons butter in a non-stick skillet over medium heat and pour in the egg mixture.

Step 13: Plate everything together on a large plate, keeping each component separate for a beautiful presentation.
Storage and Reheating Tips
Store leftover pancakes in an airtight container in the refrigerator for up to 3 days. Reheat them in a toaster or skillet over medium heat for best results.
Home fries keep well for 2-3 days in a sealed container. Reheat them in a skillet over medium-high heat with a little oil to restore their crispness.
Scrambled eggs and sausage are best enjoyed fresh, but can be stored separately for up to 2 days. Reheat eggs gently in a skillet with a touch of butter to avoid drying them out.
For a quick meal prep option, you can cook all components the night before and simply reheat them in the morning for a hot breakfast in minutes.
