Instructions:
Step 1: Preheat oven to 375°F (190°C). In a skillet over medium heat, melt butter and sauté garlic until fragrant. Add spinach and cook until wilted. Remove from heat.
Step 2: In a bowl, mix cooked spinach, cream cheese, and Parmesan cheese. Season with salt and pepper.
Step 3: Slice a pocket into the side of each salmon fillet. Spoon the spinach-cheese mixture into each pocket.
Step 4: Brush salmon with olive oil and rub with blackened seasoning.
Step 5: Heat an oven-safe skillet over medium-high heat. Sear the salmon for 2-3 minutes per side until browned.
Step 6: Transfer skillet to oven and bake for 8-10 minutes, or until salmon is cooked through.
Step 7: Serve warm with lemon wedges if desired.
