Instructions
Step 1: Heat a skillet or Blackstone griddle over medium heat. Brown the ground beef with salt and pepper until fully cooked. Drain excess grease and stir in chopped pickles.
Step 2: Lay out tortillas. On half of each tortilla, sprinkle cheddar and mozzarella cheese, add a layer of beef and pickles, drizzle with ketchup or burger sauce if using, and top with more cheese. Fold tortillas in half.
Step 3: Melt butter or heat oil on the griddle. Cook quesadillas for 2-3 minutes per side until golden brown and the cheese is melted.
Step 4: Remove, slice into wedges, and serve hot!
Storage Information
Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or oven at 350°F (175°C) until crispy and warmed through. Freezing is possible; wrap tightly and freeze for up to 1 month, then reheat in the oven or air fryer.
