Instructions:
Step 1: In a large skillet, cook the bacon until crispy. Drain on paper towels and chop into small pieces. Set aside. In a saucepan, combine maple syrup, bourbon (if using), and 110 g brown sugar. Simmer until slightly thickened. Stir in chopped bacon and set aside.
Step 2: In a large mixing bowl, combine warm milk, yeast, and granulated sugar. Let sit for 5-10 minutes until foamy. Add melted butter, egg, salt, and flour. Mix until dough forms. Knead on a floured surface for 5-7 minutes until smooth and elastic. Let rise in a greased bowl, covered, for 1 hour or until doubled.
Step 3: Roll out dough into a large rectangle. Spread with softened butter, sprinkle with brown sugar and cinnamon. Roll tightly into a log and cut into 12 rolls.
Step 4: Grease a baking dish and pour half of the bourbon bacon glaze on the bottom. Arrange rolls cut side up, cover, and let rise for 30-45 minutes.
Step 5: Preheat oven to 350°F (175°C). Bake rolls for 25-30 minutes until golden brown. Drizzle with remaining bourbon bacon glaze while warm.
