For the Braised Oxtail:
2 1/2 lbs oxtail pieces
2 tbsp vegetable oil
1 large onion, chopped
3 garlic cloves, minced
1-inch piece ginger, minced
2 tomatoes, chopped
2 tbsp tomato paste
1 tsp paprika
1/2 tsp ground coriander
1 tsp curry powder
Salt and black pepper to taste
4 cups beef broth or water
For the Sukuma Wiki:

1 small onion, sliced
2 garlic cloves, minced
1 bunch collard greens (or cabbage), finely sliced

2 cups maize flour (cornmeal)
