Instructions
Step 1 Heat olive oil in a large skillet over medium heat, then add diced potatoes.
Step 2 Season potatoes with salt, pepper, paprika, garlic powder, and thyme, cooking for 10–12 minutes until golden and tender, stirring occasionally.
Step 3 Add sliced sausage to the skillet and cook for 4–5 minutes until browned and heated through.
Step 4 In a bowl, whisk together eggs, milk, salt, and pepper.
Step 5 Push potatoes and sausage to one side of the pan and add butter to the empty side.
Step 6 Pour in the eggs and gently scramble until soft and fluffy.
Step 7 Mix slightly or serve components side by side as desired.
Step 8 Garnish with fresh herbs if using and serve warm.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in a skillet over medium heat for best texture.
Microwave in short intervals, stirring halfway through.
Eggs are best reheated gently to avoid becoming rubbery.
Potatoes may be crisped again in a pan before serving for best results.
