Instructions
Step 1: Preheat your oven to 375°F (190°C).
Step 2: In a medium bowl, combine the chopped broccoli, red bell pepper, cheddar cheese, mozzarella, cream cheese, garlic powder, and onion powder. Mix until well blended.
Step 3: Pat the chicken breasts dry. Using a sharp knife, slice a pocket into the side of each breast, being careful not to cut all the way through.
Step 4: Stuff each chicken breast with the broccoli cheese mixture. Secure the opening with toothpicks if necessary.
Step 5: Season the outside of the chicken breasts with salt, pepper, and paprika.
Step 6: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until golden.
Step 7: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave. These stuffed chicken breasts can also be frozen for up to 2 months—just thaw in the fridge overnight before reheating.
