Instructions:
Step 1: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Step 2: In a bowl, mix ground chicken, 1/2 cup buffalo sauce, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper until well combined.
Step 3: Take a cube of mozzarella and wrap a portion of the chicken mixture around it to form a ball. Roll in extra breadcrumbs to coat.
Step 4: Place chicken bombs on the prepared baking sheet and bake for 18–20 minutes, or until cooked through and golden.
Step 5: Remove from oven and drizzle with remaining 1/2 cup buffalo sauce. Top with crumbled bacon and garnish with parsley.
Step 6: Serve warm with ranch or blue cheese dressing for dipping.
