Instructions:
step 1 Bring a pot of salted water to a boil. Add baby potatoes and cook until just fork-tender, about 10-12 minutes. Drain and set aside.
step 2 In a large skillet, heat 2 tablespoons olive oil over medium heat. Add the cooked potatoes, paprika, chili flakes, dried parsley, oregano, salt, and pepper. Sauté for 5-7 minutes until lightly crispy and coated with herbs. Set aside.
step 3 Season steak bites with salt and pepper.
step 4 In the same skillet, heat 1 tablespoon olive oil and 2 tablespoons butter over medium-high heat. Add steak bites and sear for 2-3 minutes on each side until browned and cooked to desired doneness.
step 5 Add minced garlic during the last minute of cooking, tossing the steak bites to coat them in the garlic butter.
step 6 Plate the steak bites alongside the herbed potatoes and sliced avocado. Garnish with fresh chopped cilantro or parsley.
