Instructions
Step 1: In a medium bowl, whisk together the flour, baking soda, and salt.
Step 2: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until creamy.
Step 3: Add the eggs and vanilla extract, mixing until smooth.
Step 4: Gradually add the dry ingredients to the wet ingredients and mix until combined.
Step 5: Fold in the chocolate chips.
Step 6: In a separate bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
Step 7: Scoop small portions of cookie dough and flatten them slightly.
Step 8: Place a spoonful of cheesecake filling in the center of one dough piece and top with another piece of dough.
Step 9: Seal the edges completely to enclose the filling.
Step 10: Place the stuffed cookies on a parchment-lined baking sheet and chill for 20 minutes.
Step 11: Preheat the oven to 350°F.
Step 12: Bake the cookies for 12 to 15 minutes or until the edges are lightly golden.
Step 13: Allow the cookies to cool slightly before serving so the cheesecake filling can set.
Storage and Reheating Tips
Store the cookies in an airtight container in the refrigerator for up to 5 days because of the cheesecake filling. For longer storage, freeze them for up to 2 months. Reheat in the microwave for 10 to 15 seconds for a warm, gooey texture.
