Instructions
Step 1: Preheat your oven to 400°F (200°C).
Step 2: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, salt, pepper, and egg. Mix until just combined. Do not overmix.
Step 3: Roll the mixture into meatballs, about 1 1/2 inches in diameter. You should get around 18-20 meatballs.
Step 4: (Optional) Heat olive oil in an oven-safe skillet or Dutch oven over medium heat. Brown the meatballs on all sides for extra flavor, about 5-6 minutes.
Step 5: Pour marinara sauce over the meatballs, making sure they are mostly covered. Transfer the skillet to the preheated oven.
Step 6: Bake for 20 minutes. Remove the skillet from the oven and sprinkle mozzarella cheese evenly over the meatballs.
Step 7: Return to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
Step 8: Let the meatballs rest for a few minutes before serving. Garnish with extra parsley or Parmesan if desired.
Storage Information
Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or in a covered skillet over low heat until warmed through. You can also freeze the cooked meatballs (without the cheese topping) for up to 2 months. Thaw overnight in the refrigerator and reheat as desired.
