step 1 Preheat oven to 375°F (190°C).
step 2 Heat olive oil in a large skillet over medium heat.
step 3 Add chopped onion and cook until softened, about 3–4 minutes.
step 4 Stir in garlic and cook for 1 minute until fragrant.
step 5 Add ground beef and cook until browned, breaking it apart as it cooks.
step 6 Drain excess fat and season with salt, pepper, paprika, Italian seasoning, and garlic powder.
step 7 Add diced potatoes, tomatoes, and bell peppers, stirring to combine.
step 8 Pour in beef broth and let simmer for 5 minutes.
step 9 Transfer the mixture to a baking dish and spread evenly.
step 10 Sprinkle cheddar and mozzarella cheese over the top.
step 11 Cover with foil and bake for 25 minutes.
step 12 Remove foil and bake an additional 10–15 minutes until potatoes are tender and cheese is bubbly.
step 13 Let rest for a few minutes before serving.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) or microwave until heated through. Add a splash of broth if needed to keep it moist.
