Cheesy Beef and Rice Casserole

Instructions
Step 1 Preheat your oven to 375°F (190°C) and lightly grease a baking dish. /n
Step 2 In a skillet over medium heat, add olive oil and sauté the chopped onion until soft, about 3–4 minutes. /n
Step 3 Add the minced garlic and cook for 30 seconds until fragrant. /n
Step 4 Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed. /n
Step 5 Stir in the uncooked rice, beef broth, Italian seasoning, paprika, salt, and pepper, mixing well. /n
Step 6 Transfer the mixture to the prepared baking dish and spread evenly. /n
Step 7 Cover tightly with foil and bake for 30 minutes. /n
Step 8 Remove foil, stir gently, then sprinkle cheddar, mozzarella, and Parmesan cheese evenly on top. /n
Step 9 Return to the oven uncovered and bake for another 10–15 minutes until the cheese is melted and bubbly and the rice is tender. /n
Step 10 Garnish with chopped parsley if desired and serve warm.

Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) or microwave in portions until heated through. Add a splash of broth when reheating to keep the rice moist. This dish can also be frozen for up to 2 months and thawed before reheating.
