Step 1 Preheat oven to 375°F (190°C) and lightly grease a muffin tin. /nStep 2 Press tortilla chips gently into each muffin cup to form small cups. /nStep 3 Heat olive oil in a skillet over medium heat and cook ground beef until browned. Drain excess fat. /nStep 4 Stir in taco seasoning and water, then simmer for 3–5 minutes until thickened. /nStep 5 Spoon the seasoned beef evenly into each tortilla cup. /nStep 6 Top each with cheddar and mozzarella cheese. /nStep 7 Bake for 8–10 minutes until cheese is melted and bubbly. /nStep 8 Remove from oven and let cool slightly. /nStep 9 Garnish with green onions and diced tomatoes, and serve with sour cream if desired.
Storage and Reheating Tips
