Instructions:
Step 1: Preheat oven to 375°F (190°C). Lightly grease a baking dish.
Step 2: In a small bowl, combine cream cheese, mozzarella cheese, crumbled bacon, ranch seasoning, garlic powder, and onion powder. Mix until well blended.
Step 3: Cut a pocket into the side of each chicken breast without cutting all the way through.
Step 4: Spoon the cheese mixture into each pocket, then secure with toothpicks if needed. Season the outside of the chicken with salt and pepper.
Step 5: Heat olive oil in a skillet over medium-high heat. Sear chicken on each side until golden brown, about 2–3 minutes per side.
Step 6: Transfer chicken to the prepared baking dish and bake for 20–25 minutes, or until cooked through (internal temp of 165°F).
Step 7: Let rest for 5 minutes before serving. Garnish with additional bacon or herbs if desired.
Storage Information:
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave. This dish also freezes well for up to 2 months—thaw overnight before reheating.
