Step 1: Preheat oven to 375°F (190°C) and grease a baking dish./nStep 2: In a skillet over medium heat, cook ground beef until browned. Add onion and cook until softened, then stir in garlic./nStep 3: Drain excess grease and stir in diced tomatoes, ketchup, beef broth, Italian seasoning, paprika, salt, and pepper./nStep 4: In the prepared baking dish, layer the cubed potatoes evenly, then pour the beef mixture over the top./nStep 5: Cover with foil and bake for 35–40 minutes or until potatoes are tender./nStep 6: Remove foil, sprinkle cheddar and mozzarella cheese evenly over the top./nStep 7: Return to oven and bake uncovered for an additional 10–15 minutes until cheese is melted and bubbly./nStep 8: Let rest for a few minutes before serving.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 325°F (160°C) or microwave until warmed through. This casserole can also be frozen for up to 2 months and reheated before serving.
