Instructions
Step 1: Preheat oven to 400°F (200°C) and lightly grease a baking dish. /n
Step 2: Slice each potato thinly, making sure not to cut all the way through (use chopsticks or spoons as a guide). /n
Step 3: In a small bowl, mix melted butter, olive oil, minced garlic, salt, pepper, paprika, and thyme. /n
Step 4: Place the potatoes in the baking dish and brush generously with the butter mixture, making sure it gets between the slices. /n
Step 5: Bake for 40–45 minutes, basting with more butter mixture halfway through. /n
Step 6: Remove from oven and sprinkle cheddar and mozzarella cheese over and between the slices. /n
Step 7: Return to oven and bake for another 10–15 minutes until cheese is melted and potatoes are crispy. /n
Step 8: Garnish with fresh parsley and serve warm.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
Reheat in the oven at 350°F (175°C) until warmed through and crispy, or microwave for a quicker option.
These potatoes can be frozen, though best texture is achieved when enjoyed fresh.
