Instructions

step 1 Preheat oven to 375°F (190°C) and grease a baking dish.
step 2 In a large bowl, whisk together eggs, milk, and heavy cream.
step 3 Stir in salt, black pepper, garlic powder, and paprika.
step 4 Add hash browns, cooked sausage or bacon, bell peppers, and onion, mixing well.
step 5 Fold in half of the cheddar and mozzarella cheese.
step 6 Pour the mixture into the prepared baking dish and spread evenly.
step 7 Top with remaining cheese.
step 8 Bake for 35–45 minutes until set and golden on top.
step 9 Remove from oven and let rest for 5–10 minutes.
step 10 Garnish with fresh chives and serve warm.

Storage and Reheating Tips

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) or microwave individual portions. This casserole can also be frozen for up to 2 months and reheated when needed.
