Instructions
Step 1: Preheat your oven to 375°F (190°C).
Step 2: In a skillet over medium heat, cook the ground beef with garlic powder, onion powder, Italian seasoning, salt, and pepper until fully browned. Drain excess grease.
Step 3: Stir in 1/2 cup of pizza sauce into the cooked beef and mix well. Remove from heat.
Step 4: Spread a thin layer of pizza sauce in the bottom of a 9×13-inch baking dish.
Step 5: Spoon the beef mixture evenly into each tortilla, sprinkle with a little mozzarella cheese, and roll them up. Place seam side down in the baking dish.
Step 6: Pour the remaining pizza sauce over the top of the enchiladas, then sprinkle with the remaining mozzarella, pepperoni slices, and red onion if using.
Step 7: Bake uncovered for 20–25 minutes, until the cheese is melted and bubbly.
Step 8: Garnish with chopped parsley or basil and serve hot.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through. You can also freeze the enchiladas before baking—cover tightly with foil and freeze for up to 2 months. Bake from frozen, adding an extra 15–20 minutes to the cooking time.
