Cheesy Spinach Stuffed Chicken Breasts

Step 1: Preheat your oven to 375°F (190°C). Slice a pocket into each chicken breast by cutting horizontally, being careful not to cut all the way through.

Step 2: In a skillet, heat olive oil over medium heat. Add garlic and spinach. Sauté until wilted (or warmed through if using frozen). Remove from heat.

Step 3: In a bowl, mix sautéed spinach with cream cheese, mozzarella, Parmesan, salt, and pepper until well combined.

Step 4: Stuff each chicken breast with the spinach-cheese filling. Secure with toothpicks if needed.

Step 5: Season the outside of the chicken with paprika, garlic powder, onion powder, salt, and pepper.

Step 6: In an oven-safe skillet, heat olive oil over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes per side until golden brown.

Step 7: Transfer skillet to the oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 8: Remove from oven, let rest for 5 minutes, and serve warm. Pair with salad or roasted vegetables.

Storage Information

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave. For best texture, avoid freezing as the cheese filling may separate when thawed.
