Cheesy Taco Lasagna Casserole

Instructions

Step 1: Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Step 2: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.

Step 3: Add taco seasoning and water to the skillet. Simmer for 2-3 minutes until thickened. Stir in salsa and black beans, then remove from heat.

Step 4: Place two tortillas at the bottom of the prepared baking dish, tearing to fit as needed.

Step 5: Spread one-third of the beef mixture over the tortillas, then sprinkle with one-third of the shredded cheese. Repeat layers two more times, finishing with cheese on top.

Step 6: Cover the dish with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until the cheese is bubbly and golden.

Step 7: Let rest for 5 minutes. Top with sliced black olives, diced tomatoes, and chopped cilantro. Serve with sour cream and lime wedges.

Storage Information

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave or reheat the entire casserole in the oven at 350°F (175°C) until warmed through.
