Step 1: Preheat oven to 425°F (220°C). Toss halved potatoes with olive oil, salt, and pepper. Spread on a baking sheet cut side down and roast for 25–30 minutes until golden and crispy.
Step 2: While the potatoes are roasting, brown the ground beef in a skillet over medium heat. Drain excess grease and stir in taco seasoning. Cook for 2–3 more minutes to blend flavors.
Step 3: Once potatoes are cooked, transfer them to a serving dish. Top with seasoned beef and sprinkle with shredded cheddar cheese.
Step 4: Let the heat melt the cheese slightly, then dollop sour cream over the top. Add diced tomatoes and garnish with chopped cilantro or green onions if desired.
Step 5: Serve immediately while hot and cheesy!
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to maintain potato crispiness. For best results, add fresh toppings like sour cream and tomatoes just before serving.
