Step 1: In a large bowl, combine grated carrot, chopped onion, chopped greens, and cheese.

Step 2: Add the egg, flour, baking powder, salt, and pepper. Mix until a thick batter forms.

Step 3: Heat oil in a frying pan over medium heat.

Step 4: Drop spoonfuls of the batter into the hot oil, flattening slightly with the back of the spoon.

Step 5: Fry for 2–3 minutes on each side or until golden brown and crispy.

Step 6: Remove and drain on paper towels. Serve warm with your favorite dipping sauce.

Storage Information

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or air fryer to maintain crispiness. You can also freeze the fritters—reheat from frozen in the oven at 375°F (190°C) until heated through.
