Step 1: Bring a large pot of salted water to a boil and cook the shell pasta according to package directions until al dente.
Step 2: Drain the pasta and set aside.
Step 3: In a large bowl, combine the ground chicken, breadcrumbs, egg, dill, parsley, garlic, onion powder, salt, and black pepper.
Step 4: Mix gently until just combined.
Step 5: Divide the mixture into 4 equal portions and shape into patties.
Step 6: Heat the olive oil in a large skillet over medium heat.
Step 7: Cook the chicken patties for 5–6 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).
Step 8: While the patties cook, combine the cucumber, tomatoes, bell pepper, red onion, feta cheese, and dill in a large bowl.
Step 9: In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and black pepper.
Step 10: Pour the dressing over the salad and toss gently to combine.
Step 11: Arrange the cooked shell pasta on serving plates.
Step 12: Place the chicken patties alongside the pasta.
Step 13: Add a generous serving of the Mediterranean cucumber salad.
Step 14: Garnish with additional dill if desired.
Step 15: Serve immediately.
Storage and Reheating Tips
Store the chicken patties, pasta, and salad separately in airtight containers in the refrigerator for up to 4 days.
Reheat the chicken patties in a skillet, oven, or microwave until heated through.
Pasta can be reheated with a small splash of water to prevent drying out.
The cucumber salad is best enjoyed within 2 days for maximum freshness.
Do not freeze the salad, as the vegetables will lose their crisp texture.
Chicken patties can be frozen for up to 2 months and thawed overnight in the refrigerator before reheating.
